PDO stands for “Protected Designation of Origin” For a particular area to be awarded the PDO status, it must be producing an outstanding olive oil and have a good reputation. For an extra virgin olive oil to qualify as PDO Kalamata, it must be grown and produced in the designated area of Kalamata, but it must also meet strict requirements in terms of varietals, method of production and overall quality.
The glass or pet bottles we use are in dark green color in order to protect from light the healthy characteristics of the Extra Virgin Olive Oil we choose for our varieties.
Extra Virgin Olive Oil is an all natural product, which may become cloudy at temperatures below 7 C (45 F), but will clear at room temperature.
Store Extra Virgin Olive Oil in a cool, dark and dry place to preserve its nutritional and organoleptic values.
